Pork Recipes

This week at Meijer they have a "log" of pork for sale...it's actually called Center Cut Half Boneless Pork Loin. It is on sale for $1.79 per pound. The one I bought yesterday was close to 4#, but not quite, and cost me less than $7. I will be able to get about 3 meals (maybe 4?) out of this for my family of 5. When you buy the meat, it is a lot of meat...BUT you can cut it in half or thirds and freeze each portion separately. Yesterday I bought one of these "logs" and cut half of it into slices for pork chops and froze...I threw the rest of it in the crockpot to make this recipe:

Pork for Tacos
2 # pork (use what pork works for you)
1 can diced green chilies, drained
1/8 c. chili powder
1/2 t. dried oregano
1/2 t. taco seasoning
1 t. garlic powder
3/4 t. salt

I put the meat in the crockpot and then combined remaining ingredients and spread over the top of the roast and cooked on low for about 8 hours. I pulled out the meat and shredded it up. I then froze it to pull out for tacos at another time. I sampled it before freezing and it was pretty tasty! :)

You can also do this:

BBQ pork for sandwiches
2 # pork
1 can beef broth
1-2 bottles of BBQ sauce

Put the roast in the crockpot and pour beef broth over it. Heat on low for about 8 hours. Pull out and shred. I then emptied the leftover juices from the crockpot, washed it up and then put the shredded meat back in. Pour the BBQ sauce over the pork and stir in. Heat till warm.

Thanks to my sister for recommending these recipes. The original recipes called for cooking the meat in the oven but the crockpot is SO much easier!
