Tasty Tuesday...on Wednesday--Mexican Chicken

Tonight I made something new for dinner...and took a big risk in doing so due to the fact that I was also needing to deliver a meal to a family who just welcomed a new little one into their family. Thankfully it tasted good (at least my family thought so!)! I found this on a recipe blog that I check out every now & then.

This is a VERY easy & delicious meal. To keep it a bit healthier, you can use the "healthy for you" cream soups and a reduced fat cheese.

Mexican Chicken

soft taco shells (I had burrito shells on hand so I used about 3 of them), torn into pieces
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel
1 bag of shredded cheddar cheese
3-4 chicken breasts

Place chicken in skillet, cover with water and boil till cooked through. Let it cool a bit and then cut into cubes. In a bowl combine soups, rotel & chicken and stir together. In bottom of 9x13 dish (it may help to spray this lightly, mine stuck to the bottom a little bit), spread out the pieces of taco shells to cover the bottom. Pour chicken/soup mixture over top. Sprinkle with cheese and bake at 350 degrees for 35-40 minutes.

  1. That recipe looks really good. I once made tuna casserole and the only ones who would eat it were the cats. My kids might like this one though (I have six and it's hard to find things they all like.)
