Does anyone make meals to put in their freezer to use for a later date? I don't do this a ton but it does come in handy! I want to do it more. One of our favorites is a recipe for Cheese Filled Shells. It makes a lot (40 shells) and for our family one full recipe can be split into 3 meals for us.
Cheese Filled Shells
1 box of Jumbo shells
32 oz. cottage cheese
16 oz. mozzarella cheese
3/4 c. Parmesan cheese
3 eggs
3/4 t. oregano
1/2 t. salt
1/2 t. pepper
1-2 jars spaghetti sauce
Cook the shells according to the box. Drain the water and then cool on a piece of waxed paper.
Combine the cheeses, eggs and spices. Fill each shell with 2 tablespoons of the cheese mixture. (Tip: I cut the corner off of a ziploc bag (freezer bags work better because they are stronger), put the cheese filling in it and then fill the shells that way. Less mess and probably quicker??)
To freeze: I put all of mine in a tupperware container and separate the layers with waxed paper and freeze.
To serve: Thaw stuffed shells. In the bottom of baking dish (full recipe--use 9x13), spread a thin layer of spaghetti sauce (about 1/2 cup). Arrange the shells on top of the sauce. Pour remaining sauce over top. Bake at 350 degrees for 30 minutes.
