Last Friday I was "visiting" Kelly's Korner and found a super yummy recipe!! Every Friday she hosts Show Us Your Life and this day happened to be 'Dinner Recipes'. She put up a favorite recipe of hers and then several others linked to their blogs with their favorites. If you're in need of something new, check it out here!
Kelly put pictures of her favorite dish up and it looked so YUMMY! I decided to give it a try tonight because it was was simple, easy and not very expensive to make. Go to her blog to get the exact recipe. I made minor changes. This is what I did:
5 T. olive oil
2 T. lemon juice
4 cloves garlic, minced
1 t. salt
1/2 t. black pepper
1 can cut green beans, drained
4 russet potatoes, cut into larger cubes
4 chicken breast halves
about 1 t. lemon pepper seasoning (this can be hot/spicy so use an amount that works for you!)
Preheat oven to 450 degrees. In a bowl combine: olive oil, lemon juice, garlic, salt & pepper. Add green beans to this mixture and stir around to coat well. With a slotted spoon, scoop out green beans (I let as much of the oil drain off them as I could) and place in 9x13 baking dish. Then add the potatoes to the olive oil mixture and coat them as well; then place in baking dish with beans. Place the chicken in the olive oil mixture and coat; then place chicken on top of beans & potatoes. Sprinkle chicken & veggies with lemon pepper seasoning. Bake for 40 minutes.
It was super good and had excellent flavor! Tim even ate the green beans...and LIKED them!!! :)
