Yesterday I went to Kroger and bought about 10 pounds of chicken being it was on sale for $1.87 a pound. I thought this was a pretty good price to stock up on. Occasionally I see it go on sale for $1.69 - $1.79 a pound but not very often. I generally see it for around $1.99 a pound.
When I buy chicken in larger packages I divide it up into portions that work for my family. I have been trying to prepare the chicken so that it is ready to go for when I need it by making marinades in a Ziploc freezer bag and then adding the chicken.
Today we tried some new recipes...all included ingredients I already had on hand. Joel & I put together 4 bags of chicken and then put together a dish for our dinner tonight. We made Sticky Chicky, BBQ Jelly Chicken, Teriyaki Chicken and Lemon Garlic Chicken. For our dinner, we made Chicken on a Ritz.
First we gathered up all of the ingredients we would need to make the marinades.
Then we labeled each of our bags with what was in them and baking instructions. We put all of the marinade ingredients in the bags.
I sure hope this one tastes better than it looks!
Once all the marinades are mixed up in the bags, add 4-8 pieces of chicken to each bag, let out the air, seal the bags and then put them in your freezer.
It's that simple! It doesn't take a lot of time to do and you don't even have to dirty all that many dishes...just your measuring utensils! :) And when you're ready to use them, you pull the bag out of your freezer the day before, thaw it in the fridge, dump into a baking dish and bake at 350 for 30-45 minutes, until the chicken is done.
And our dinner...Chicken on a Ritz! YUM!!! :)
Sticky Chicky
2 tablespoons oil
1 tablespoon soy sauce
3 tablespoons smooth peanut butter
3 tablespoons ketchup
BBQ Jelly Chicken
3/4 cup ketchup
3/4 cup blackberry jam (strawberry, peach and apricot also work well)
*We used grape jelly because that is what I had on hand.
1/8 cup white vinegar
1 teaspoon worcestershire
2 teaspoon chili powder
1/8 teaspoon salt
Lemon Garlic Chicken
2 cloves chopped garlic (I minced my garlic rather than chopping it)
4 tablespoons olive oil
2 tablespoons chopped parsley (I used 2 teaspoons dried parsley)
3 tablespoons lemon juice
1/8 teaspoon pepper
Teriyaki Chicken
1/2 cup soy sauce
1/2 cup sugar
1 1/2 T. red wine vinegar
2 t. vegetable oil
1 small minced garlic clove
3/4 teaspoon ground ginger

Chicken on a Ritz
6 pieces of chicken
1 can cream of chicken soup
1 c. sour cream
1 sleeve Ritz crackers, crushed
1 stick butter, melted
poppy seeds
Place chicken in bottom of 9x13 baking dish. Combine soup and sour cream in a small bowl. Pour & spread over chicken. Combine crackers and butter. Sprinkle over dish. Sprinkle poppy seeds over that. Bake at 350 for 1 - 1 1/2 hours.
