*I just made these with Seasoned Salt rather than regular salt last night...even BETTER!! They didn't have as salty of a taste.
I love this time of year...being able (not that I couldn't any other time) to make all things pumpkin! :) Pumpkin roll...pumpkin cookies...pumpkin bread....YUM!
The other day I made some pumpkin seeds. They were pretty tasty!
I first dug out the seeds and tried to sort them out from the "gook" the best I could and put them in a colander. I rinsed them off with water to get more of the "gook" off. Then I laid them all out on paper towels in a single layer to dry out overnight.
I only had a small amount of pumpkin seeds (about 1/2 cup) because I bought an overpriced hull-less pumpkin. I thought there would be more seeds in it than there were. Oh well...live & learn.
I combined:
1 t. spray butter (you could use melted butter but I had this on hand so it was easy)
1/8 t. salt
1/8 t. garlic salt
1/2 t. Worcestershire sauce
Stir the pumpkin seeds into this mixture and then lay them out on a baking sheet. Preheat oven to 275 and bake for 1 hour, stirring about every 15 minutes.
Note: If you don't like salty stuff, you may want to reduce the salt.
I'll probably be sharing my favorite pumpkin recipes over the next several weeks. If you have a favorite...please share!!
