Still in the mood for some pumpkin goodness??

I made several desserts for all of our family things last week and tried a couple of new desserts with pumpkin. YUM!!

Pumpkin Cheesecake Bars
Heat oven to 375. Spray your dish with cooking spray.

Batter:
1 c. pumpkin
1 c. sugar
1 egg
1/3 c. vegetable oil
1 c. flour
1/2 t. baking soda
1 t. baking powder
1/2 t. salt
1/4 t. nutmeg
1/4 t. ginger
1 t. cinnamon

Whisk together: pumpkin, sugar, egg and vegetable oil. Then add remaining ingredients and mix well. Pour into a dish (any size from 8x8 to 9x13--I used 11x7). The smaller the dish, the thicker it will be; therefore you may need to alter the baking time.

Cheesecake Filling:
4 oz. cream cheese, softened
1/4 c. sugar
1 egg
Chocolate Chips

Beat together. Drizzle over your batter and then cut through with a knife to make a marbled pattern (Note: if you use a smaller dish, there won't be much of a marbled pattern because there will be more filling to cover the top.) Sprinkle top with chocolate chips.

Bake 30-40 minutes, or until done (will be dependent upon dish size).


Pumpkin Dessert

15 oz. pumpkin
12 oz. can evaporated milk
3 eggs
1 c. sugar
4 t. pumpkin pie spice
1 box yellow cake mix
3/4 c. butter/margarine, melted
Cool Whip, for garnish

Preheat oven to 350 degrees. Grease 9x13 dish.

Combine pumpkin, milk, eggs, sugar and spice; mix well. Pour into dish. Sprinkle dry cake mix over top and then drizzle with melted butter. Bake for 1 hour or until knife come out clean. Cool and store in refrigerator. Serve with cool whip.

*If you don't have pumpkin spice, maybe you have cinnamon, nutmeg and ginger?? You can combine 2 t. cinnamon, 1 t. nutmeg and 1 t. ginger to make up the 4 t. of pumpkin spice!!
