I have been trying to think of things that I can make with my large stash of potatoes. A while back I had come across a recipe on a blog (pretty sure it was Mommy Snacks) called Garlic Oven Fries. I decided to make them this past weekend. They were delicious!
Garlic Oven Fries
You will need:
4 potatoes, each cut into 8 wedges
2 t. olive oil
1 t. basil
1 t. garlic salt
Heat the oven to 500 degrees. Spray a jelly roll pan with cooking spray.
Place potatoes in a bowl. Drizzle olive oil over them and toss to coat. Sprinkle the potatoes with basil and garlic salt; stir to get the spices on the potatoes evenly. Arrange in a single layer in your pan. Bake for 15-18 minutes, stirring once halfway through.
I must not cook all that often at high heats because today I discovered a 500 degree oven is VERY HOT!! I had to turn it down when I stirred the potatoes because I could barely stand to open the oven door. Our potatoes were not crispy...they were soft and tender. This is how we like them...if you prefer them crispier I would recommend keeping your oven at the blazing 500 degrees and maybe bake them longer. Just keep an eye on them and make them to your liking.
*I increased the recipe to 6 potatoes for our family b/c I didn't think 4 potatoes was going to cut it with the kids. They LOVE fries! Tim was busy with stuff for work so it was just the kids & myself eating. I think next time I will need to use 8 potatoes to be sure we have enough. The kids gave their approval...it's a keeper! :)
