Okay...this is for the record books! Zak said that this was the best meal ever and that it was SO GOOD! Not one complaint! And if you know Zak, you know this is HUGE!
It was a simple meal...
For the boy's birthday party over the weekend, we had tacos. I had plenty of leftover taco meat so I needed to do something with it...having tacos again wasn't an option.
This is what you will need:
Crushed Tortilla Chips (about 2-3 cups)
1 - 1 1/2 # taco meat
Cottage Cheese (about 1 cup or so)
Sour Cream (about 1 cup or so)
Shredded Cheddar Cheese (about 2-3 cups)*
Spray the bottom of a 9x13 baking dish with cooking spray. Combine cottage cheese & sour cream together; set aside. Spread half of the crushed chips on the bottom of dish. Then layer half of the meat and then half of the cottage cheese/sour cream mixture. Sprinkle with half of the shredded cheese. Repeat the layers with remaining ingredients.
Bake at 350 for about 30-35 minutes.

*You can also use Monterey Jack or a Mexican blend of some sort...whatever you have on hand!
