Recipes: Marinated Pork Chops and Cheesy Potatoes

YUM, YUM, YUM! These pork chops were super tasty!! My sister & I made these at our first freezer cooking day and I made them tonight for dinner. One of us found the recipe on allrecipes.com.

Marinated Pork Chops
You will need:
3/4 c. vegetable oil
1/3 c. soy sauce
1/4 c. vinegar
2 T. Worcestershire sauce
1 T. lemon juice
1 T. prepared mustard
1 t. salt
1 t. pepper
1 t. dried parsley
1 or 2 garlic cloves, minced
6 pork chops (I think chicken or steak would work great too!)

We combined all of these ingredients in a Ziploc freezer bag and froze. I pulled the meat from the freezer yesterday and the meat thawed in the fridge overnight and all day today (the meat marinates as it thaws).

If you choose to not freeze, you can still use this recipe and marinate overnight in your fridge.

I baked my pork chops, with the marinade in a 9x13, at 350 degrees for 1 hour. You could also grill, if you chose (discard the remaining marinade if you grill).

*A cheap way to get pork chops is to watch for pork loin to go on sale, usually anywhere from $1.49 - $1.79/# is a good price...have the butcher cut into chops for you or cut at home on your own.

And most people are familiar with Cheesy Potatoes, but I know there are a few out there who are not...this is one of the yummiest ways to eat potatoes!! Not saying they are good for you...but YUM!

Cheesy Potatoes
You will need:
1 bag of frozen hash brown potatoes (I've used cubes & shreds...either one works!)
1 can of cream of chicken soup
1 16 oz. container of sour cream (reduced fat works fine)
1 8 oz. bag of shredded cheddar cheese
1/4 c. butter, melted (or if you're like me and think it's going to melt in the oven anyway??...just slice it up and mix it in!)
chopped onion, optional (I probably use about 1/4 - 1/2 cup)
salt & pepper, to taste

Mix all together in a large bowl and pour into 9x13 dish. Bake at 350 for about 45-60 minutes.

Some people sprinkle the top with chip crumbs or corn flakes...I prefer mine without, but it's up to you!

    I have deleted your comment because I don't feel it necessary to leave rude comments on my blog. I am simply posting family friendly recipes that others can use. I think it is fine if you don't like something or don't even want to try it...but there is no need to be rude.
