Prepping Meat for Grilling Season

This week Meijer has chicken on sale for $1.79/# through the end of tomorrow (5/1). This is a great stock up price!!

If you like grilling marinated chicken, here are a few recipes that you can put together and throw in your freezer so that they are ready to go. These are SO easy to do. You basically just throw the chicken and specified ingredients in a Ziploc freezer bag and freeze. Pull the bag from your freezer the night before you would like to use it and let it thaw (in the fridge). The meat will marinade as it thaws and is delicious! :)

These are a couple of my favorites (use about 6 pieces of chicken per recipe):

Lemon Garlic Chicken
2 cloves chopped garlic (I minced my garlic rather than chopping it)
4 tablespoons olive oil
2 tablespoons chopped parsley (I used 2 teaspoons dried parsley)
3 tablespoons lemon juice
1/8 teaspoon pepper

Teriyaki Chicken
1/2 cup soy sauce
1/2 cup sugar
1 1/2 T. red wine vinegar
2 t. vegetable oil
1 small minced garlic clove
3/4 teaspoon ground ginger

This will work for pretty much any marinade that you like. It also works well with salad dressings...just pour the dressing over the chicken and freeze. It's that simple!
