Tasty Tuesday...on Wednesday--Mexican Chicken

Tonight I made something new for dinner...and took a big risk in doing so due to the fact that I was also needing to deliver a meal to a family who just welcomed a new little one into their family. Thankfully it tasted good (at least my family thought so!)! I found this on a recipe blog that I check out every now & then.

This is a VERY easy & delicious meal. To keep it a bit healthier, you can use the "healthy for you" cream soups and a reduced fat cheese.

Mexican Chicken

soft taco shells (I had burrito shells on hand so I used about 3 of them), torn into pieces
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel
1 bag of shredded cheddar cheese
3-4 chicken breasts

Place chicken in skillet, cover with water and boil till cooked through. Let it cool a bit and then cut into cubes. In a bowl combine soups, rotel & chicken and stir together. In bottom of 9x13 dish (it may help to spray this lightly, mine stuck to the bottom a little bit), spread out the pieces of taco shells to cover the bottom. Pour chicken/soup mixture over top. Sprinkle with cheese and bake at 350 degrees for 35-40 minutes.

Ever heard of Popchips?

My nutritionist person (I don't know what her exact title was...sweet lady though!) at my doctor's office told me about these...she says they are good for you and even taste good but I've not tried them yet. I will now that there is a coupon!! :)

FREE copy of The Full Plate Diet

P & G eSaver


**UPDATE: I called Kroger about e-coupons because I was finding mixed thoughts on e-coupons when I was looking into it a bit more. Some were saying you could use them with manufacturer coupons and others were saying you could not. This is what I found out--there is GREAT potential for some VERY good deals with these e-coupons! I asked if the e-coupons could be used in ADDITION to normal paper coupons from the Sunday paper...she said YES! They do not double though and you can also only load one of each coupon onto your card and it can only be used once...still, that can make out for some pretty good deals!!! I've also read in places that only a certain number of coupons can be loaded onto your card...not real sure about that though. Anyone know??

Does anyone use e-coupons? If so, what do you think?

I've not tried these before, and quite honestly, I'm not even sure how they work. I need to do a bit of research on them. I did just load a few e-coupons from P & G eSaver onto my Kroger card and am planning to use them this week. There were some good ones on there for items that are on sale this week at Kroger. We'll see how it goes.

There is another e-coupon site called Cellfire. I believe these can be downloaded to a cell phone OR a Kroger card. Shortcuts is another one. It seems Kroger is the only store locally participating with the e-coupons.

So let us all know...do you use these...if so, what do you think?

*If you're a Target shopper they have some coupons for Kashi products on their site that you'd be able to put with this coupon. Go here for Target coupons. FYI: I've printed coupons from the Target site and the cashier would not take them because they wouldn't scan. For whatever reason, the Target coupons and Meijer Mealbox coupons print the bar code lines very close together and they do not scan. Meijer says this happens to most everyone and they still accept them. I've not had much luck at Target with these but you can give it a try. Maybe your printer prints better than mine??
